Banana Split Ice Cream Sundae

Delicately layered banana, chocolate fudge sauce, crushed peanut sundae with Carte D’Or vanilla ice cream. Looks stunning served in a tall glass.
  • 300 g Carte D'or vanilla ice cream
  • 80 ml double cream
  • 50 g light soft brown sugar
  • 2 tbsp cocoa powder
  • 30 g unsalted butter
  • 1/8 tsp water
  • 90 g 50% cocoa dark chocolate bar
  • 3 medium bananas
  • 125 ml double cream
  • 80 ml whipping cream
  • 75 g dry roasted salted peanuts
  • 1 To make the chocolate fudge sauce, place all ingredients except for the dark chocolate into a small pot and simmer on lowest heat for two minutes. Remove from heat and whisk in the chocolate until you have a smooth sauce.
  • 2 Whip the two creams together until stiff, transfer to a piping bag and place in the fridge while you put the sundaes together.
  • 3 Slice the bananas roughly half a centimetre thick.
  • 4 Layer up chocolate sauce, ice cream, peanuts and banana in each glass. Finish by piping on whipped cream and sprinkling with peanuts.
  • 5 Serve immediately.
