Chocolate Ganache & Crushed Strawberries

Delicious home-made chocolate ganache. Can be served with other products in the Carte D’Or range to add colour or give a seasonal feel.
  • 4 x 50 g (200 g in total) scoops Carte D'or strawberry ice cream
  • 185 g dark chocolate (52 % cocoa)
  • 185 ml double cream
  • 1/8 tsp salt
  • 200 g strawberries
  • 3 tbsp / 35 g caster sugar
  • 1 Firstly, make ganache. Break up chocolate in to a bowl. Bring cream to just under boiling point and pour it onto chocolate and add salt. Let it sit for 5 minutes before stirring to a smooth mixture. Let it cool to room temperature then chill until firm.
  • 2 Remove from fridge and bring back to room temperature before using. It must be brought back to room temperature before whipping or it will turn grainy.
  • 3 While waiting for ganache, chop the strawberries into roughly 8 pieces each. Put into a bowl and sprinkle the sugar over. Add lemon juice and mash roughly with a fork. Let it macerate for 10 to 15 minutes.
  • 4 When ready to serve, whip the ganache with an electric hand mixer at no more than medium speed until it is pale, fluffy and thickened.
  • 5 Place the ganache mixture into a piping bag and pipe some in the bottom of each bowl.
  • 6 Place a scoop of ice cream on top of ganache and spoon the strawberries and their sauce over.
