Christmas Pudding Sundae

This is a fantastic way to use up leftover Christmas Pudding. Replacing the mulled wine with cranberry juice makes this dessert a child friendly alternative.
  • 8 scoops of Carte D'Or Vanilla Ice Cream (200g/400ml)
  • 200g Christmas Pudding
  • 100g cranberry sauce
  • 2 tbsp mulled wine
  • 2 tsp sugar
  • 2 tbsp flaked almonds, toasted
  • 1 tbsp chocolate shavings
  • 1 Crumble the Christmas Pudding into a small pan. Place on a low heat and warm through.
  • 2 Mix the cranberry sauce, mulled wine and sugar in a separate pan. Bring to the boil and stir for two minutes to combine.
  • 3 Spoon half of the warmed Christmas pudding between four tall sundae glasses.
  • 4 Drizzle a spoonful of hot cranberry sauce over the warmed Christmas Pudding and top with a scoop of Carte D’Or Vanilla Ice Cream.
  • 5 Repeat the layers with the remaining warm Christmas pudding and hot cranberry sauce and finish with a scoop of Carte D’Or Vanilla Ice Cream in each sundae glass.
  • 6 Sprinkle with toasted flaked almonds and chocolate shavings. Serve immediately.
