Iced Summer Fruit Puddings

A lovely, fruity, summer dessert made even more refreshing with Carte D’Or Vanilla Ice Cream
  • 10 scoops of Carte D’Or Vanilla Ice Cream (250g/500ml)
  • 4 ready-made meringue nests
  • 100g strawberries, quartered
  • 100g raspberries
  • 50g blueberries
  • 50g redcurrants
  • 2 tsp runny honey
  • 4 cherries with stalks for decoration
  • 1 Line 4 x 150ml ramekin dishes or small teacups with cling film and set to one side.
  • 2 Place the Carte D’Or Vanilla Ice Cream in a bowl and crumble the meringues over the top.
  • 3 Add half of the berries and gently fold in.
  • 4 Spoon the mixture equally between the 4 prepared ramekins or teacups and level out. Cover with cling film and place in the freezer for 1 hour.
  • 5 Make the berry sauce by placing the remaining berries in a blender with the honey and blitz until smooth.
  • 6 Turn the iced puddings out onto serving plates and remove the cling film.
  • 7 Serve each iced pudding drizzled with the berry sauce.
