Blackberry Compote and Zesty Vanilla
This makes a delicious autumnal dessert, fresh and seasonal. Use fresh strawberries in summer.

12 scoops of Carte D’Or Vanilla Ice Cream (300g/600ml)
2 lemons, zest only
4 whole blackberries
4 sprigs of mint
Mix the blackberries, sugar and water in a pan and bring to the boil. Boil for 3 minutes.
Zest 2 lemons. Fold the lemon zest through the Carte D’Or Vanilla Ice Cream.
Spoon a tablespoon of blackberry compote into 4 serving glasses
Top with a scoop of zested Carte D’Or Vanilla Ice Cream.
Repeat to form 6 defined layers, finishing with a scoop of zested Carte D’Or Vanilla Ice Cream.
Decorate with a whole blackberry and a sprig of mint.
