Brandy, Fig and Almond Parfait

  • 8 scoops of Carte D’Or Vanilla Ice Cream (200g/400ml)
  • 50g dried figs, chopped
  • 25ml brandy
  • 25g flaked almonds, toasted
  • 100ml whipping cream, whipped
  • 1 tbsp flaked almonds, toasted
  • 1 Mix the chopped figs and brandy in a small saucepan. Bring to the boil then remove from the heat and allow to cool.
  • 2 Mix the figs and brandy into the Carte D’Or Vanilla Ice Cream
  • 3 Fold in the flaked almonds and whipped cream.
  • 4 Pour into a 1kg loaf tin and freeze for 8 hours.
  • 5 Serve remove from the tin, cut into slices.
  • 6 Decorate with the toasted flaked almonds.
