Brandy, Fig and Almond Parfait

8 scoops of Carte D’Or Vanilla Ice Cream (200g/400ml)
50g dried figs, chopped
25g flaked almonds, toasted
100ml whipping cream, whipped
1 tbsp flaked almonds, toasted
Mix the chopped figs and brandy in a small saucepan. Bring to the boil then remove from the heat and allow to cool.
Mix the figs and brandy into the Carte D’Or Vanilla Ice Cream
Fold in the flaked almonds and whipped cream.
Pour into a 1kg loaf tin and freeze for 8 hours.
Serve remove from the tin, cut into slices.
Decorate with the toasted flaked almonds.
