This dish makes islands from small servings of Carte D’Or Vanilla Ice Cream, and is also delicious with fresh blueberries. Why not use three different flavours and serve as a trio?

8 scoops of Carte D’Or Vanilla Ice Cream (200g/400ml)
100g dark chocolate (70%)
40g dark chocolate chips
50ml dark rum
15g toasted chopped hazelnuts
COOKING METHOD

Scoop the Carte D’Or Vanilla Ice Cream into a bowl and mash with the back of a spoon.

Mix in the dark chocolate chips.

Place tablespoons of the Carte D’Or Vanilla Ice Cream mixture on a baking sheet covered with baking parchment and mould with the back of the spoon into circles or shapes.

Return the ice cream islands back to the freezer for 1 hour.

Melt the dark chocolate in a bowl over a pan of simmering water.

Pour in the rum, the chocolate will thicken.

Serve 2 or 3 islands per person, topped with the chocolate rum sauce and sprinkled with the toasted chopped hazelnuts.
