A light and refreshing mousse made with fresh strawberries, Irish cream liqueur and Carte D'Or ice cream.

Irish Cream Liquer and Strawberry Iced Mousse

INGREDIENTS

  • 10 scoops of Carte D’Or Vanilla Light Ice Cream (250g/500ml)
  • 250g strawberries, hulled
  • 100g dark chocolate (70%)
  • 1 tsp clear honey
  • 7 tbsp Irish Cream Liqueur
  • 1 Cut 100g of the strawberries into slices.
  • 2 Put the remaining 150g strawberries into a food processor or blender with the icing sugar, Carte D’Or Vanilla Light Ice Cream and 4 tbsp of Irish Cream Liqueur. Blitz to make a coarse puree.
  • 3 Divide the puree mixture between 4 dessert glasses, place in the freezer and semi freeze for 20 minutes.
  • 4 Break the chocolate into a small heatproof bowl and place over a small pan of simmering water until melted, remove from the heat and add the honey and remaining Irish Cream Liqueur.
  • 5 Remove the mousses from the freezer and top with the strawberry slices.
  • 6 Serve immediately with the chocolate sauce drizzled over the top.
