INGREDIENTS

  • 4 scoops Carte D'Or Strawberry Ice Cream
  • 80 grams crumbled vanilla cookies
  • 150 millilitres lemon curd
  • 100 grams meringues
  • 1 lime
  • 100 grams icing sugar
  • 25 grams flour
  • 10 grams cocoa powder
  • 50 gram orange juice
  • 60 grams ground almonds
  • 60 grams melted butter
  • 1 For the croustillant, mix all the ingredients together until you get a smooth paste. Spread onto a piece of baking paper very thinly and bake in a preheated oven at 180 C for 10 minutes or until crispy. Cool down and break into pieces.
  • 2 Place the crumbled vanilla cookies on the bottom on the cocktail glass.
  • 3 Spoon the lemon curd on top of the crumbles.
  • 4 Add some crumbled meringue on top of the lemon curd.
  • 5 Place a big, round scoop of Carte D’Or Strawberry Ice Cream on top.
  • 6 Top with lime zist and a croustillant piece.
