Pistachio Sandwiches

  • 100g of Carte D'Or Vanilla Ice Cream
  • 8 coconut macaroons or biscuits
  • 25g pistachio nuts, finely chopped
  • 1 Place 4 up turned biscuits on a baking tray.
  • 2 Scoop the Carte D’Or Lavazza Ice Cream into a bowl and stir in 4/5ths of the chopped pistachio nuts.
  • 3 Spoon the ice cream mix onto each up turned biscuit. Smooth out to flatten and neaten the edges to match each biscuit shape.
  • 4 Top with the remaining biscuit, press down lightly. Return to the freezer for 10 minutes.
  • 5 Serve immediately.
