Try serving these delicious ice cream sandwiches with morning coffee.

100g of Carte D'Or Vanilla Ice Cream
8 coconut macaroons or biscuits
25g pistachio nuts, finely chopped
Place 4 up turned biscuits on a baking tray.
Scoop the Carte D’Or Lavazza Ice Cream into a bowl and stir in 4/5ths of the chopped pistachio nuts.
Spoon the ice cream mix onto each up turned biscuit. Smooth out to flatten and neaten the edges to match each biscuit shape.
Top with the remaining biscuit, press down lightly. Return to the freezer for 10 minutes.
