Red Berry Crumble

This is a winter treat for both young and old, perfect for a Sunday lunch dessert.

  • 4 scoops of Carte D’Or Vanilla Ice Cream (100g/200ml)
  • 400g frozen forest fruits
  • 25g caster sugar
  • 100g plain flour
  • 50g brown sugar
  • 50g butter, cubed
  • 50g marzipan, diced
  • 1 Pre-heat the oven to 180°C/160°C fan assisted/ Gas Mark 4.
  • 2 Mix the frozen fruits and caster sugar in a large pan. Simmer gently for 5 minutes.
  • 3 Mix the flour and brown sugar in a large bowl, rub in the butter using your finger tips until the mixture resembles breadcrumbs. Mix in the diced marzipan.
  • 4 Pour the fruit mix into a medium sized oven proof dish.
  • 5 Spread the crumble topping over the fruit and bake in a pre-heated oven for 30 minutes or until golden brown.
  • 6 Scoop a generous ball of Carte D’Or Vanilla Ice Cream and serve.
