White Chocolate And Fresh Berry Clafoutis

INGREDIENTS
4 scoops of Carte D'Or Crèma di Mascarpone Ice Cream (116g/200ml)
100g blueberries
150g raspberries
2 tbsp brandy
5g butter
400ml milk
50g white chocolate
3 large eggs
50g flour
75g sugar
1 tsp vanilla extract
Sprinkle of icing sugar
COOKING METHOD

Wash the berries, put into a small bowl and pour over the brandy, leave to marinate for 1 hour.

Grease 4 individual large ramekins with butter.

Preheat the oven 180°C/ 160°C fan assisted/ Gas Mark 4.

Heat the milk and white chocolate in a small pan until the chocolate has melted.

Whisk together the eggs, flour, sugar and vanilla extract and then gradually whisk in the milk and white chocolate mixture.

Divide the marinated berries between the greased dishes or dish and pour over the batter.

Place in the oven on a baking tray and cook for 35 - 40 minutes.

Scoop a ball of Carte D'Or Crèma di Mascarpone Ice Cream onto the berry Clafoutis.

Serve sprinkled with icing sugar.
