White Chocolate And Fresh Berry Clafoutis

Liqueur marinated fresh berries in a white chocolate batter and baked in the oven for a touch of luxury.

  • 4 scoops of Carte D'Or Crèma di Mascarpone Ice Cream (116g/200ml)
  • 100g blueberries
  • 150g raspberries
  • 2 tbsp brandy
  • 5g butter
  • 400ml milk
  • 50g white chocolate
  • 3 large eggs
  • 50g flour
  • 75g sugar
  • 1 tsp vanilla extract
  • Sprinkle of icing sugar
  • 1 Wash the berries, put into a small bowl and pour over the brandy, leave to marinate for 1 hour.
  • 2 Grease 4 individual large ramekins with butter.
  • 3 Preheat the oven 180°C/ 160°C fan assisted/ Gas Mark 4.
  • 4 Heat the milk and white chocolate in a small pan until the chocolate has melted.
  • 5 Whisk together the eggs, flour, sugar and vanilla extract and then gradually whisk in the milk and white chocolate mixture.
  • 6 Divide the marinated berries between the greased dishes or dish and pour over the batter.
  • 7 Place in the oven on a baking tray and cook for 35 - 40 minutes.
  • 8 Scoop a ball of Carte D'Or Crèma di Mascarpone Ice Cream onto the berry Clafoutis.
  • 9 Serve sprinkled with icing sugar.
